I would suggest installing your programs via rpm whenever possible to
avoid this kind of problem. AFAIK, you can have both gtk+ 1.0 and
gtk+ 1.1 runtime libraries in place just fine, but putting in both
devel packages is going to cause endless grief.
My best suggestion (if you don't want to install rpms): Install the
gtk+ 1.0 devel package, and compile any gtk+ apps based on 1.0.
Remove the gtk+-devel 1.0 package, and install the 1.1 devel package.
Then you can compile any packages based on 1.1.
