That has *absolutely nothing* to do with netatalk.
TCP/IP is TCP/IP. Appletalk is Appletalk. Never the twain shall meet ;-)
I have systems running just fine with System 7.5 and no Open Transport. As
long as the Mac's have an ethernet connection, they should do fine.

That sounds right.
Also, if you don't have any other Mac servers on your network, make sure
to set up your /etc/atalkd.conf file on the linux box, so that the linux
box knows how to configure its interface for appletalk.

You shouldn't need to configure your ethernet interface for TCP/IP just to
get it to do Appletalk. Like I said, they are two unrelated protocols.
