I'm not good at NFS at the moment, but procedurally speaking, I have a 
very nifty backup system given to me by a cool sysadmin friend of mine 
that is in Perl.

Each machine to be backed up has its own config file, and the master perl 
script reads the config files, does backups, and counts total bytes used, 
sends Email to the backup person for each machine as designated in the 
config files.

Even better, there is SMBTAR, which, believe it or not, can backup WFW, 
Win95, and possibly NT machines through Samba.

You need to be careful not to backup /proc.

Tar is the tool of choice, it seems.  

I would have to ask buddy Dave if I can show you or donate the beautiful 
yet simple system he put together.
