Use Emacs or XEmacs, I prefer XEmacs, with the mail package VM. You
can find info on VM under help in Emacs. VM can handle your popclinet
needs also.
Or as some users prefer you can use Gnus for both mail and news
reading under Emacs. To get a reply to address, and I think that is
what you are asking for, just add the line:
(setq mail-default-headers "Reply-To: whoever@junk.com")
XEmacs and Emacs can do just about anything you need, not just
editing, however for the beginner I definitely suggest XEmacs
which you will find a rpm in the RedHat contrib directory.

VM will most definitly do this for you.
