pine configuration

I am new to pine and have some config questions. 

1. How can I get initial mail messages to have my name in the header
   to the receiver?  Now, when I send messages, say to the Rh list, 
   the header looks like 
   
    To: redhat-list@redhat.com
  I want it to have my name as 
    sen1@math.msu.edu
2. Apparently, I can invoke an alternate editor (I want emacs).
  But, it seems to only let me edit and save files. For instance, how can 
I use emacs to compose and send mail messages?

3. How do I get to see all the headers in composing a mail message?
  For instance, I don't know that my messages will be received as 
  To: redhat-list@redhat.com
 until I actually send them and see what the list gets.

Is there decent documentation somewhere?
