From the main menu, select [O]ther to get a list of other commands in 
Pine.  From there select [S]etup and from there, select [C]onfig (I 
believe this is the name, it should be *obvious* here).  THis is where 
you can set all of your *personal* stuff.  THis should answer most of 
your questions.

I'm not sure what the address is, but a search of Lycos or some other 
such serch engine should return *tons* of hits regarding Pine.  It is 
written by some folks at Univeristy of Washington and I belive they 
maintain a FAQ and help and a bunch of other stuff reqarding Pine.
