I'm quite happy with the combination of an NCR53c825 controller and a
Mustek scanner. However, there's a big potential problem with
lower-priced scanners, which I don't run into because my disks are still
IDE.

They generally do not disconnect from the SCSI bus during a scan. This
means that, as long as they are scanning an image, the SCSI bus cannot be
used by other devices. Since a large scan in color mode can take a minute
or two, the immediate problem you run into is disk timeouts and other
nastiness.

The simple solution is to get two SCSI controllers, one for the scanner
and one for disks and such. Mail-ordering an NCR53c810 controller should
be about $50.

The more expensive solution is to buy a higher-priced scanner that
you're sure does not display this antisocial behavior.
