My personal favorite is "The New Laurel's Kitchen" -- its recipes are mostly
in the basic range (i.e. not exotic) and I've always had very good experiences
preparing them! This book includes a lot of text on current nutrition, and
charts for nutritional content of ingredients and recipes. You can get an
immediate feel for the book by flipping through it at the store.
