Hey everyone!!
Great dinner the other night! I think we should definitely try to keep having
them at least over the summer--how about the week after next?
Anyways, these are the recipes for the two things I brought:
GREEK PILAF (from the Moosewood Cookbook)

makes 6 servings, about 50 mins to prepare
1 1/2 C raw brown rice (long or short grain)
2 1/4 C water (or however much you need to cook the rice)
1-2 T olive oil
1 1/2 C minced onion
1 small celery stalk, minced
1/2 tsp. salt (optional)
1/2 C lightly toasted sunflower seeds or pine nuts
black pepper
4-5 medium cloves garlic, minced
2 T lemon juice
1/4 C freshly chopped parsley
1 T dried mint or 3 T fresh minced
--Cook the rice, for about 40-45 mins, depending on the rice.
--Heat the oil in a skillet. Saute the onion, celery and salt until vegetables
are tender. (5-8 mins)
--Add sunflower seeds or pine nuts, black pepper and garlic, and saute another
5 mins.
--Stir sauteed mixture into cooked rice along with the lemon juice and herbs.
Mix well.
VEGAN MUFFINS: (makes 12)

I've made lots of muffins over the past year, though only recently have been
experimenting with vegan ones. These amounts are approximate--play around with
this recipe and see what works.
2 C flour (I use half whole wheat, half unbleached regular)
1/4 - 1/2 C crushed cereal or oats
1 1/2+ T baking powder
cinnamon, nutmeg, cocoa, or other spices
3T honey (you could try maple syrup too, or white sugar and more water or oil)
1/4 - 1/2 C vegetable oil
3/4 C water
1 tsp (minimum) vanilla
optional add-ins:
chopped apples, raisins, or other kinds of fruit
chocolate chips
nuts
instant coffee (put in with water)
--Preheat oven to 350 deg.
--Mix the dry ingredients in a bowl, stir.
--Combine liquid ingredients in another bowl, stir together.
--Add wet ingredients to dry ingredients, stirring until mixture is consistent,
though it won't be smooth.
--Stir in any other ingredients.
--Spoon batter into greased muffin tin.
--Bake for 15 mins., until tops are slightly brown.
