Here is what I made for the vsg dinner. It was inspired by "Tofu and
Broccoli in Garlic Sauce" recipe on page 82 of Tofu Cookery by Louise
Hagler, but I didn't have all the right ingredients (and I am not very
good at following recipes anyway), so this is what I did:
Soaked 1 block of tofu (all I had) in soy sauce for over 1/2 hour.
Drained the excess soy sauce (saving it) and fried the tofu in a little oil.
Removed tofu and fried a large (or 2 med) onion in a little safflower oil.
Added about 4 cloves of finely chopped garlic.
Added 1.5 cups of water,
1/2 a "Cube Tom Yam" which is a spice cube for soup; it is like hot curry.
1 tbsp of ground mustard
some grated ginger
some black pepper
a bit of red pepper
couple tbsp of maple syrup
Cooked a short time and then throw tofu and soy sauce back in.
Cooked a couple minutes longer and put in 2 stalks of broccoli
Cooked until it is about done, and then added 1-2 tbsp of corn starch
dissolved in cold water (not more than 1/2 cup).
(Sorry about the ambiguity in quantities, I don't measure unless I
am trying to follow a recipe closely.)
