I don't have anything working yet,  but I was in the same predicament a few months ago.  I can tell you what I discovered did *not* work... The only potential solution I was able to find was "wide area bonjour", which essentially replaces mDNS with unicast DNS using a search domain and an ANY query. The documentation regarding this is very encouraging, however after some packet captures, I determined that the iThings don't actually utilize the search domain/wide area bonjour for Airplay.

Sometime after that, we received an email from Aruba regarding their new "Airgroup" functionality.  We plan on looking into this at some point, but have yet to do so:

We are being asked to make Apple TV work on our Aruba Wireless network. We
have spend several days and read plenty of blogs regarding issues with ATV
and corporate wireless. Is anyone out there actually using it in the
classroom, on wireless for more than just a pilot? If so I would like to
