We have Cisco wireless and were looking for solutions as well.
Although not fully implemented yet, the plan I came up with was to add
a Apple airport express to each classroom that we planned to add an
Apple TV. We planned to implement 20 classrooms this summer spread out
between 6 buildings. Each airport express would be hard wired and the
ssid would match the room #.
Managing these "rogue" network devices does pose some problem.
However, with AirPort Utility you should be able to remote into each
airport express by ip address and manage them separately.
This may not be the best solution but it does reduce the ability to
accidentally connect to an apple tv that is in a different room or
building completely.
