Some of these data are available in EDUCAUSE's Core Data Service. If
your institution has participated, your CIO has access to the data to
run comparative reports. If your institution hasn't participated or
you're not on speaking terms with your CIO, you can access some of the
aggregate data in the publicly-available reports. The most recent
report is for FY2009 and it's at

For example, Figure 1-5 in that report shows the number of
"Centralized Student Workers" but it's in full-time equivalents and
not raw numbers. The data are broken down by (old) Carnegie
Classification, though, so it may not give you the precise answer you
want (I suspect you really want student employee:student ratio; at
least that's what I really want!). But the data still might be
useful, particularly if your institution seems to differ significantly
from the median. Similarly, Figures 2-11 and 2-12 show student
employee salary.
And there also the older ResNet-specific surveys conducted by the RARG
but they're both a bit dated. I can't seem to find the reports online
but if you contact me offlist I should be able to dig them up or send
you the relevant information.
