Portabellas...

Oh, wow, of course! They are fantastic!  But you can't treat them like
those white button mushrooms; they have too much flavor.

Saute them in a little olive oil with onions and garlic (don't use a
non-stick pan for this).
Then once they are browned and the onions are just browned, deglaze the pan
with a little white wine (assuming you are over 21, wink-wink) and add a
*pinch* of nutmeg, and serve as a side dish, or over rice or (better) over
fresh pasta.

These mushrooms are also great in non-vegan recipies; they knock your socks
off in a quiche, and there's a great recipie in _Green's_ cookbook for
potatoes and chantarels baked in cream, where you could also substitute
portabellas.

As soon as I get a moment, I'll pass along a *great* vegan tofu cheesecake
recipie I've been using, faking people out.  They eat it, they love it, and
they don't believe it's tofu!
