EarthSave puts out an excellent book "Healthy School Lunch Program" (HSLP) 
that references the current strictures that schools must follow.  They are 
different for every school district.  It also lists contact information for 
finding out specifics.

The HSLP is a handbook for activists who want to change school food 
programs.  Though a vegetarian program is the goal, the emphasis is on 
transition to a healthy low-fat, high-fiber diet.  This is a diet 
description that allows administrators to come up to speed with you and a 
technique that has been shown to work.  It should be emphasized that the 
book is based on experience with several school districts, so this is very 
practical info.

EarthSave also has a HSLP Working Group that can provide support, info, and 
live humans to work with you.  It might be fun to get a chapter organized 
locally.

I'd like to find out about any federal or state laws that might be out there 

regarding mandatory university meal plans and students with special diets.  
I
would think that there might be some sort of protection for people with
religious dietary restrictions (e.g. kosher) or allergies when the dining
halls
are unable/unwilling to accomodate their diet.  Such laws, if any exist,
should
also apply to vegatarians/vegans (similar to the laws that protect students
who
have conscientous objections to dissection...)

I'd like to set up a web site as a resource for student vegetarians and
student
veg societies dealing with this and other issues.  If you have any
suggestions,
or know of other college (or high school!)  veg org URLs, please let me 
know.
