i really like this recipe, and its really easy.  mostly opening cans :)

1) actually not a pot pie, bread is only on top
2) sorry, not vegan :(
   try non-dairy cream instead of milk?  margarine instead of butter,
   and make your own cream-of- soup with non-dairy cream?  dunnno.
3) RecipEase seems to be mostly flour.  i'd suggest trying pancake mix
   as a substitute if you cant find this - it is an "all purpose baking
   mix" and has this recipe as well as pancake instructions (add milk and
   eggs) so i assume a pancake mix would be a decent substitute.

cubed potatoes & mushrooms (to replace 3 cups diced chicken)
1 package (10 oz) frozen mixed veggies 
	(i used a peas, corn, beans, carrot mix)
1 can (10.75 oz) cream of mushroom soup, undiluted
	(was originally cream of celery, i prefer mushroom)
1 cup veggie broth (originally chicken)
1/4 teaspoon pepper
3/4 cup milk
1/4 cup (1/2 stick) butter or margarine, melted

1) preheat over to 400 deg F
2) grease a shallow 2 quart baking dish.  spread veggies evenly in prepared
dish (youll need to boil the potatoes first, maybe cook the mushrooms a
little)
3) stir together soup, broth, and pepper in bowl, pour evenly over
veggie mixture
4) combine RecipEase mix, milk and butter in separate bowl, stir til
smooth.
5) pour flour mixture over ingredients in dish
6) bake 45-50 minutes or until golden brown.  cool 10 min before serving.
4-6 servings.
