It would be nice if whole-grain foods were available: brown rice as a
daily option would be a start (you can always get brown rice at the Food
Trucks), and there should also be a daily main dish that involves a
variety of grains, beans, and vegetables.
I highly encourage anyone involved with meal planning at ARAmark or
anyone else interested to take a 5-minute trip up to Central Square and
look at the products in the Harvest Co-op (by the Central T stop on the
outbound side of the street). This store stocks a wide variety of
healthy grains that can inspire recipe ideas. When I do my own cooking,
I invent a new recipe each time by selecting a few of these products.
The store provides extensive cooking information for these products.
You might consider copying down some names and searching the ARA recipe
database to see what comes up. Examples include quinoa, amaranth,
pumpkin seeds, soybeans, mung beans, etc. etc.
Finally, it might be helpful both for Aramark and for the VSG if aramark
could keep detailed records, at least for a few weeks, of how many
servings of food are sold broken down according to various categories:
whether it is lacto-ovo or vegan, whether it includes whole grains,
whether it has cheese in it, etc. This will allow justification of this
effort from a business point of view and allow VSG to indirectly know
more about the MIT population's eating habits. Anyone else want to
suggest more categories that would be useful to know about? Can this
search be done automatically using cash register logs and/or stocking
records?
