The following is a copy of a memo I sent to all MIT Foodservice
Managers, which may be of interest to you.

                           MEMORANDUM

Beth & I met with representatives of the Vegetarian Support Group (VSG)
today to discuss plans for the "Great American Meatout" on March 20th.
Following is a list of suggestions we considered. As each unit needs
to be involved for this to be a success, we need your support & 
enthusiasm.  Please let us know if you have any comments, suggestions,
or new ideas.

(1) Promote vegetarian specials at a reduced price across campus &
attempt to provide vegan entrees for the day.

(2) Serve ONLY vegetarian soups that day across campus

(3) Post nutritional analysis of all vegetarian specials

(4) Give away free taste samples (souffle cups or small portions with
toothpicks) of all vegetarian foods we serve on our daily menus, which 
will hopefully bring in more sales.

(5) VSG will staff a booth (outside Lobdell or Walker) on the day of the 
meatout, & could give away free taste sample of food we are serving
that day.

(6) Prior to the meatout, they will also have a booth in Lobby 7 &
would like any free donations we can get from vendors (i.e. veggie
burgers, veggie chili dogs, hummus).  We could prepare a nice fruit &
vegetable display for this booth.

(7) Provide table tents on all tables campus wide promoting the 
meatout in conjunction with national nutrition month (VSG would provide 
text for & we would produce)

(8) Provide handouts for VSG booths which list our vegetarian specials 
for the day of the meatout, as well as our everday vegetarian offerings

(9) VSG will provide pledge sheets to get people psyched up about the 
event before hand, and commit to going meatless for the day.  An entry
to raffle away a gift certificate to a vegetarian restaurant (?Country
Life) could be an incentive to pledge.  We could help get pledges at all 
units, as well as at our national nutrition month booth.

(10) Possible provide an R.D. / nutritionist for their booth
