to all you veggies still living in hell:
i noticed from the previous post that the food service (is it still ara?)
is serving up a heaping load of dairy and eggs. have you kept the pressure
on to move to a more vegan menu? probably the best way is to show them how
to replace the dairy cheeses with vegan versions and the egg quiches with
tofu quiches. you could do this by 1. providing them with recipes (bulk
recipes are most helpful); 2. preparing or bringing them samples along
with the recipes (how about treating them to a Country Life lasagna
dinner? --a good way to win over any lasagna lover to veganism; 3. finding
cheap sources (distributors) of bulk dairy and egg-free versions of the
foods they are serving.
for recipes, i know of two sets intended for food services: PCRM's Gold Plan
and American Vegan Society
's recipes for 100 (if i remember the title correctly) (i showed them the
latter while i was there.) you could also bring them recipes from tofu
cookery and the uncheese cookbook, which they can scale up.
