There has been recent mail asking for our opinions on rennet in 
cheese.  I try and buy vegetarian cheese when possible, but the 
problem is that the choice is restricted.  At one time, only cheddar 
was available in veg variety.  Now my local supermarket has several 
other hard veggie cheeses, Cheshire, Lancashire, etc.  Being a bit of 
a cheese fan, I often forget my vegetarianism and buy all sorts of 
things.  Is it true that ALL soft cheese was never made with rennet 
in the first place?  My brother told me this once.  If so, great - I 
really like Brie and Camembert.  Also, vegetarian Stilton is supposed 
to be even better than the original, just that no-one ever thought of 
trying to make it until very recently.
What about gelatin, too?  I often slip up there and eat various 
sweets that contain it.  Is there a veg alternative to gelatin?  
There ought to be, as it's just a fairly pure mixture of the right 
proteins, so I suppose it can't be too hard to make it in the same 
way as rennet.
