Hi! For those of you who may not know me, my name is Laura Dilley, I am
very much interested in serving as a member of the committee to study the
food services at MIT. As a health-conscious individual and vegetarian, I
and others with similar concerns have found it difficult to obtain
adequate, varied fare from MIT Food Services. As president of the
Vegetarian Support Group with over 150 members (representing a fraction of
the total vegetarian population at MIT) I am also in a position to
represent a large portion of the MIT community with an especial interest in
what is and will be offered by the MIT Food Services. With reference to my
experience, I have met with Rob McBurney, director of Food Services for
MIT, as well as Kathy Richmond Bowler, the assistant food service director,
on occasion with the goal of getting more vegetarian options in the
cafeterias. I would like to add that vegetarianism is a growing trend, and
is adopted by more and more health-conscious people annually, as well as
those concerned about animals and the environment. We can expect to see a
larger proportion of the MIT population seeking healthy vegetarian fare. I
ask that you keep these concerns in mind in selecting the committee, and
that you strongly consider me as a candidate. I will be an active and
contributing member.
