nfsid -r server
This will flush all your mappings... however, there is one catch to
this command... all the servers have to be updated to 6.1C or higher
(since there are no 6.1 packs, 6.2A will suffice). Until this is done,
this feature won't be available. Half of the support was already there,
but it was not until 6.1 that it was fixed.
Of course, this command is authenticated...
