McAfee ePolicy Orchestrator gives you central AV policy management
ePO agent is installed on every workstation to manage policies and software
installation
(we let students and staff download this from a web page)

You can then push VirusScan, dat updates and product upgrades to students as
required from a local ftp mirror of the virus update site.

The technology that Peter Valian mentioned, where updates are peer-to-peer
is mainly in the VirusScan ASAP product and is called Rumour Technology.
This is designed for these managed installations of ASAP to save bandwidth
for small businesses connected to the internet.
