We replaced a lot of our physical systems with VMware View virtual
desktops and set them up as non-persistent desktops (now called
"floating" dekstops) meaning the virtual desktop gets deleted and
rebuilt once the user logs out. It takes a lot of work and
infrastructure to get it working though. I just saw in a Microsoft Road
Map webinar that they have something similar to VMware View's
non-persistent virtual desktops, not sure what it costs, what it takes
to setup or how easy it is to manage.
We use a lot of group policies with our virtual desktops (and with our
physical publicly accessible desktops) and that helps to keep the
systems from being a management nightmare, we also do not give our
user's Administrative access on the desktops.
The old way we used to lock down our desktops was by now locking them
down at all and using DeepFreeze to put the machines back to their
initial state after a reboot. With View our machines are part of Active
Directory but with our DeepFreeze machines they were not... but they
might be able to join the domain, not sure.
