Hi Richard,
We are about 90% dual boot across campus, running iMacs and MacBook Pros
for faculty, staff and labs, and minis for classroom installations. We used
to buy keyboards that were made for dual boot setups, but have found that
regular PC keyboards work just as well. We also put a few Apple keyboards
in dual boot labs and those that prefer them gravitate to them.
While we do have many users using VMWare Fusion, we've never used it in a
lab.
The biggest problem we face is remote management - you never know when a
computer might be booted into Windows or OS X.
