I am in general prepared for conversations like that.  I explain why
a course on C has no real place in a computer science department, at
least as an emphasized/required class, why languages like Scheme and
CLU are more important to learn, and how any competent programmer can
pick up any language quickly, anyway.
If they don't agree, they probably don't understand software
engineering that well, and you probably don't want to work for them as
a programmer/software designer.  (Again, this assumes you have the
luxury of choice.)
