The character you play is called Pok, which is pronounced {paq}.

The original being "Ah, yes," I'd translate this as {maj}.

I'd probably simplify this as

chontay Ha'DIbaH 'ey law' Hoch 'ey puS

But your version isn't bad.

You really want to use those topicalizers, don't you! :) But there's a
little problem here: in a "to be" sentence, the topic has to go AFTER
the pronoun! I'd also clip the "come" part to make it a little more natural.

toH, naDev ghaH wamwI''e'. paq, naDev ghoS! ghoS!

Not bad, considering the controversy over topics and all. I think I'd
simplify this too. It needs simplifying, but my tired brain isn't
parsing well tonight.

For one, put {yuQvamDaq} before the rest of the sentence; make it a
locative for the entire sentence, not just the B part of the law'/puS.

One of my pet peeves is people using {HIja'}, {HISlaH}, or {ghobe'} when
not in response to a yes/no question. I'd rather incorporate it here as
certainty in the statement. ("Yessiree, I sure am proud he's my son!")

    puqloDwI' ghaHmo' jIHevbej.

Alternatively:

    ghaHvaD puqloD vIpongmo' jIHevbej.

I feel tempted to add {-ta'} to {rIn}, since the Rite took place that
night. Tomorrow he doesn't call him warrior son "as soon as" the Rite is
finished.

Also, I think you can keep the symmetry of the original English like so:

'ej, wa'leS, rInta'DI' nentay, *SuvwI'* puqloD ghaHmo', jIHevqu'

I'd like to be able to put {-'e'} on {SuvwI'}, but I can't for two
reasons. Instead, it'll just have to be emphasized with intonation.

It's slang: {paw' paq tlhIngan je}. There is no non-slang verb for it.
(KGT 157-158)

I don't think there's any such known toast. On the other hand, I think
this is one case where the topicalizer is incontrovertibly appropriate!
