How do I send mail out?

Do I use sendmail to send mail out if I'm on a PPP link? It seems that
when I send mail out, the return path says root@gdi.net. Also, when I
start pine it says something about a bad hostname. I dont know what to
set my hostname, etc to. I am able to receive mail fine through fetchpop.
How does everyone else setup there outgoing mail and hostnames?
