This is not clear for me: though you send the message to the list, you
want to see your name appear in the To: field?

Again, it is not clear. You want to use Emacs for mailing, and abandon
Pine?

If you want to read mail in Pine, but send messages in Emacs that can
be done. In Emacs, just type "C-x m", and you are ready compose a mail
message. You have nice menus as well (no need for Xemacs). But you
cannot use (simply) both pine and Emacs for Mail reading.

If you want to have a lot of control over your mail you want to use
MH. Since you like Emacs, probably you want to use mh-e, the Emacs
interface for MH. It has no menus coming with Emacs but I can send you
a file which will enable menus for mh-e. 
There is an MH book you can buy (from O'Reilly), and it is also
available now for free over the net. There is also the info file for
mh-e you can read in Emacs.
