Edit /etc/fstab, and substitute "msdos" with "vfat" as filesystem
type. This will give you read/write access to your VFAT-partitions. 

For more info on flags you can use in /etc/fstab, try "man 8 mount"

There is some alpha-level support for Read-Only NTFS-support floating
around somewhere, but this is not included with Red Hat or the kernel.
