Some nice programs are multitrack (find it by visiting
http://www.opensound.com and clicking on the apps),
sound studio (comes with RedHat 5.2), xwave (old, but
good for recording), and sox (comes with RedHat,
includes command line tools, but does LOTS of cool
things like effects).
