When this happened in my chapter (It's happened 3 times in 4 years!) We
held an emergency election to replace the position.  The only time we
didn't do that was when our president left towards the end of the semester
and then one of our 2 VPs of Service stepped up into the president
position.  Usually we just have nominations the week we find out the
officer is leaving and vote the next week.  I don't know if this is the
best way, but it has worked for us.
