   We've got a new important system going in soon... what I'd like is a
   program (or set of programs) that thoroughly exercise the system

What I do is to run one or more bonnie processes on each partition,
all while doing a kernel compilation.  You can do more than one kernel
compilations, if you have huge real memory, until the system begins to
swap.  This should exercise every non-network component of the
system.  Let all the thing run for a couple of nights, and you should
be assured.
