At Ease is a program made for Macs which disables access to the desktop
(is that the Mac term?), and will do other tasks such as only allowing
users to save files to the A: drive etc. Very easy to set up and use.

We're using Apple's AtEase, part of the Network Administrator Toolkit
2.0. Great for simplified access to a limited number of applications,
while allowing adminsitrator access to the finder.
At home, I use Kid Desk, from Edmark. Similar stuff, juvenile format but
I know of at least one office using it, too. There is a Macintosh
version.
