Hi Dave,
I think you will be fine with Office 2000. Our testing with Windows XP did
not reveal any problems. We have compiled testing results for a number of
applications on XP at
http://web.mit.edu/swrt/winxp/test-matrix.html
You may wish to consider upgrading in the future to a newer version for new
features and improvements in the product, though you do not need to just
because the machines are running Windows XP. There are a few applications
that require newer versions to fully function on Windows XP, thankfully
Office is not one of them.
