Subject: Ordering Vegi Jello and more
I recently wrote about a company making vegetarian "Jello", and got quite a
few requests for more info. I have decided to summarize, expand the info,
and respond to the whole list. If there are any further questions, please

I recently found a company making "parave" marshmallows. (They made up the
word parave, I think, to contrast with "pareve", which does NOT translate to
vegetarian). I called them and got a catalog, which includes the "Ko-Jel"
brand gelatin mixes and vegi marshmallows.
From my discussions with them, they use NO animal ingredients, no matter how
far "derived" from the source. They do this for religious reasons, I
appreciate it for vegetarian ones. (I just love my warm raspberry jello and
my rice crispies snacks.) If I remember correctly, the gelling agents come
from seaweed and other plants. It is not just "Agar". Btw, using agar in a
recipe doesn't work as a substitute for gelatin, it gels differently. I am
excited about trying the plain gelatin that they sell to make things like
chocolate mousse.
They said ordering direct would be best, since they don't have good
distribution around here. I have found a few (of about 20) of the Ko-Jel
flavors at the Mt. Auburn Street Star Market, and most supermarkets carry
their marshmallows once a year, at passover. Before ordering, please check
for your self that the products are vegetarian to whatever standards you
would like to apply; I may have misunderstood them on the phone.
