If you read the excerpt again, you'll see that his definition of
vegetarian is the same as what most people call vegans:

Of course, this doesn't completely explain his figure of 2%, which is
probably too high for vegans and too low for the class of vegetarians
which includes those who also eat eggs and/or dairy products.
