I really enjoyed talking with people in the "infinite corridor" at MIT (where 
our largest Meatout booth was staged).  Each person who comes up to you has a 
different perspective, and has their own questions, story, or issues.  I have 
a good time relating to them, and telling them what I've learned in that area 
from my personal research.  My most effective way of communicating with people 
about vegetarianism is in providing information they're already looking for, 
or are curious about.  I think a lot of people would really like to know more 
about vegetarianism, and we can help them out!
