Diet for a New America, anyone?

Hi, all,
It seems that my mother has taken to eating an extra portion of meat
each day because she feels she has not been getting enough protein.
I have tried to tell her that if you eat enough calories you are getting
enough protein. She asked me to send her some nutritional information
about protein, and the best source of information that I could think
of was one of the chapters from _Diet for a New America_, a great book
about all kinds of reasons for being vegetarian (for those people not
familiar with the book). Unfortunately, I have loaned my copy to a friend
(who is, incidentally, in the process of becoming vegetarian because of
it) so I can't get this information to my mom. I was wondering if someone
who has a copy of the book could type up the passage about protein and
post it to the group. Thanks.
