Hi Al,

Thanks for reminding me Saturday about the need for ideas for 
Baker vegetarian dining options. I know you asked
for some input quite some time ago, and I decided to just do it. 
I hope the following are helpful. Incidentally,
I think that it is great that you are really trying to keep 
vegetarians in mind in meal planning. That's wonderful!!! Keep
up the good work!

P.S. To Al and everybody on the veg list - these brief descriptions
are of recipes in my _Best of Vegetarian Times_ collection. I can't
type them all in, but if there are any specific requests, or if we'd
like to get together to try cooking any sometime, let me know. :)

Spinach and Mushroom Crepes (onion, spinach, scallions, parsley, 
basil)

Cheesy Onion Pie (lard-free pie crust, white wine, sweet onions, 
garlic, tomatoes, gorgonzola)

Cornbread-Topped Vegetable Casserole (onion, garlic, potatoes, green
beans, broccoli or cauliflower, cornmeal)

Fat-Reduced Classic Quiche (broccoli, egg, egg white, tofu, mustard, 
parmesan cheese)

Chickpea Cassoulet with Tomatoes and Chard (red pepper, thyme, chickpeas, 
tomatoes, whole-wheat spaghetti)

Lentil Patties with Curry Sauce (orange lentils, brown rice, bell pepper,
onion, oats, spices, tahini. Sauce - onion, pineapple, banana, tomato 
sauce, curry powder)

Moroccan Stuffed Peppers (vegetable stock, couscous, wine vinegar, cumin,
garlic, bell peppers, onion)

Calico Chili (vegetable stock, mushrooms, plum tomatoes, garlic,
celery, carrots, cumin, chili powder, garbanzo, kidney and pinto beans,
chiles)

Moussaka (Greek dish, minus the lamb) (garbanzo beans, eggplants, onions,
tomatoes, pepper, cheese, bread crumbs)

Quick Bean and Rice Burritos (basmati or brown rice, black beans, tortillas,
onion, tomato, chili powder)

Bean Pasta Primavera (white beans, vegetable stock, red bell peppers, tarragon, 
spinach spaghetti, broccoli, asparagus, red and/or yellow peppers, spinach, 
basil, poppy seeds, sun-dried tomatoes)

Tacos Updated (AND veg-friendly!!) (onion, curry powder, garlic, mustard, tomatoes,
salsa, tofu, corn or wheat tortillas, garnishes)

Sesame Noodles (linguini, scallions, soy sauce, cilantro, red pepper, toasted 
sesame seeds, garlic, broccoli and/or red pepper)

Creamy Light Fettuccine Alfredo (fettucine, skim or soymilk, garlic, parmesan
cheese (though this defeats the purpose if you're shooting for vegan!) parsley,
veggies of choice)

Farfalle (Bow-Tie Pasta) with Carrot, Sage and Scallion (I love this one!!!)
(farfalle, olive oil, carrots, scallions, fresh sage, lemon juice, grated cheese)

Artichoke Cannelloni with Lemon Bechamel Sauce (artichoke hearts, cannelloni pasta,
garlic, onion, oregano, basil, mirin or dry sherry, ricotta, egg, romano cheese,
low-fat mozzarella, lemon, soymilk or skim milk, butter or margarine, marinara 
sauce)

Leek and Zucchini Noodle Kugel (egg noodles, margarine, leeks, zucchini, ricotta,
mild white cheese, marjoram, ground pepper)

Go wild!!! :) Go VEG!!!
