Hi all,
You asked for more recipes, so you got it. You can get Basmati
rice in Central Square at either Harvest Co-op or Shalimar India
Grocery Store or Bread & Circus (which is on Prospect Street, the
one right after Woolworth's).

This is a recipe which I think most beginners will enjoy. It's
fast, easy, and tasty!
1 12 oz. can of black beans
2 12 oz. cans of whole peeled tomatoes
1 medium onion
1 cup of Basmati (Thai) rice
1 tsp- 1 tbsp of Thyme
black pepper to taste
Rinse the basmati rice and add to 2 cups of boiling
water. Reduce the heat to medium and cover. Chop the
onion, and cook over medium heat until translucent (can
spray the pan or add a little water to prevent sticking).
Rinse the black beans and add to the onion, mix, cook for
about 1 minute. Add the tomatoes, coarsely chop them in
the pan. Add the spices, and let simmer until the rice
is done. Add rice to bean mixture and serve. This will
easily serve two people with leftovers for lunches. Also
it can be adapted (fresh tomatoes, oil for cooking, etc.),
but this version is low fat and simple.
