There are two kinds of oyster sauce -- real and fake.  The real kind has 
"oyster extract" printed in the ingredients -- go to laverdes and see for 
yourself.  The fake kind is made with mushrooms and says "vegetarian" on it.  
Go to Papa And Goose and see for yourself.  

I recommend asking to speak with the Manager every time you sit down to eat.

Related issues:

Cheese has enzymes that come from meat, unless it is Kosher cheese in which 
case they are vegetarian.  You should call 800 numbers if they are listed on 
the package.  For example, Kraft American Cheese is made with extracts from 
beef.

I am trying to get Food Services to adopt a fourth symbol in their vegetarian 
labeling scheme to account for this -- a black star or a yellow check mark.

If the product is labeled Kosher, you can deduce certain things:  if it has 
dairy in it then it has no meat in it.  If it says "pareve" it has no dairy or 
meat.  Either way, it could have egg products or fish products in it (but no 
shell fish).  So if it has no fish and no eggs and it is "pareve" then you 
know it is Vegan.  Also, if you are looking at Kosher Oyster Sauce you know it 
is fake.  I am sure MIT students could handle this, right?
