Hello.
I tried your example with the additional command:
set(gcf,'InvertHardCopy','off');
and it printed without the y-axis. (According to their doc., this
property is on by default to improve printing contrast and decrease
toner use for non-white backgrounds; turning it off should get the
printed output to match what's on screen.)

P.S. You're not the first person to ask MathWorks about suppressing a
single axis; on the tech support page below they say that "an
enhancement request has been submitted to our development staff
requesting that an X/Y/ZAxisVisible property be added to MATLAB"...
