sensible-editor defaults to $EDITOR. If that's not set, it tries
/usr/bin/editor (/etc/alternatives managed editor - defaults to nano).
If that doesn't work, it tries nano. If that doesn't work, it tries
nano-tiny. If that doesn't work, it tries vim. And if that doesn't work,
it errors.
It doesn't do anything special if it's invoked from X. I don't think we
should worry about it.
Just setting $EDITOR should work fine.
