You find important information about system/application events in the System
Log (Transaction sm21). Certain applications (SD shipping) keep a separate
log in tables ( I think VBFCL is one of them).
Change documents (all application modules) are stored in CDCLS (check tables
CDHDR and CDPOS). You can also tell SAP to not delete interface data for the
asynchronous Update tasks. This data will then stay in tables VBHDR and
VBDATA.
Technical events like logon and logoffs are kept only for a short period in
a statfile on each appserver (you can get there via System->Monitoring).
They get collected in a less detailed way in table MONI for several quite
usefull statistics.
Last logon of a user is also stored in one of the USRxx tables (USR03 I
think).
Last but not least Customizing changes are usually logged in a central table
and can be checked with a SAP Report ( Sorry, I forgot the name but there is
a menu path too).
