Using the SQL trace function might help - but it doesn't make
sense trying to document the SAP usage on a table or field level.
Maybe for an MS Access application with 20 tables this is a
way to describe the used application functionality, but not for
R/3 with its thousands of tables.
However a documentation of used functionalty on a business
process level could gain a deeper insight. I think there are tools
for reverse engineering of R/3 installations on a business process
level out there, but I never used one of them.
