I doubt the existence of any book on Project Athena (at least I haven't
seen it). You could also check prep.ai.mit.edu:/pub/ATHENA for more
informations. Project Athena has evolved a great deal since. It is now
DECAthena. Each site has each own philosophy of management and tailored
the package to its own needs.

There is an article on IBM Systems Journal, Vol 31, No. 3, 1192 written
by J. M. Arfman and P. Roden about Project Athena.
