I can't swear to this, since I don't remember the source, but I recall
reading that the old monochrome amber monitors were the best in terms of
long-term readability, so I'd say to try amber on black. I also remember my
Commodore monitor's cyan-on-black being easy to take for hours and even
days at a time.
