Hi Brian,
St. Olaf College moved all students, faculty, and staff to Google Apps for
Education (2009). It has been one of the most positive technology
migrations that I have experienced.
1. Google Apps for Edu uses the standard built-in Gmail spam/etc.
filtering, and also allows the email user to mark messages that they feel
are SPAM. I rarely see SPAM, unless there is a new trending message that
google filtering hasn't properly identified yet.
2. IMAPS/POP3S are available for all clients. SSL/TLS is required for
outgoing SMTP.
