It isn't you. We have lots of Macs at our school. During opening, we had hundreds of problems with connecting them to our 802.1x network, but few issues with Windows machines. There are some workarounds but no real solutions that we've found.
How are you configuring them? Are you letting them auto-config themselves, are you manually setting the 802.1x settings or are you using Xpressconnect?
Overall most of the problems on our wireless network are Mac related. When we call Apple we are told that it is "the intended behavior."

We are having a new for us influx of Mac laptops this fall and we are
experiencing a difficult time getting them to hold their configuration
when initially putting them on our 802.1x authenticated Cisco/Airespace
WLAN. Two or three installations are not uncommon before it 'takes'. No
problems with the Windows 7 machines nor with XP. Is there an issue with
the latest OSX or is it our unfamiliarity with the platform?
